Microwave Paella

SERVES: 4-6
Ingredients
- 3 tablespoons oil
- 1 cup onion, sliced
- 1 clove garlic, minced
- 1 cup uncooked rice, washed
- 2 cups chicken stock, boiling
- 1½ teaspoons salt
- ¼ teaspoon saffron
- 1/8 teaspoon pepper
- 1 can (125g) prawns, drained
- ½ cups cooked chicken, 2 cm cubes
- 6 mussels, in the shell
- 1 cup peas
- ½ cup stuffed olives, sliced
Recipe
- Heat oil in a 2 litre casserole for 3 minutes.
- Add onion, garlic and heat a further 2 minutes.
- Add rice, chicken stock, salt, saffron, pepper and cook for 3 minutes. Stir.
- Fold in prawns, chicken, mussels and peas and cook a further 5 minutes, stirring after 2½ minutes.
- Add olives.
- Remove from oven and allow to stand for 10 minutes before serving.
Note: Keep casserole covered while cooking.
