Microwave Paella

SERVES: 4-6

Ingredients

  1. 3 tablespoons oil
  2. 1 cup onion, sliced
  3. 1 clove garlic, minced
  4. 1 cup uncooked rice, washed
  5. 2 cups chicken stock, boiling
  6. 1½ teaspoons salt
  7. ¼ teaspoon saffron
  8. 1/8 teaspoon pepper
  9. 1 can (125g) prawns, drained
  10. ½ cups cooked chicken, 2 cm cubes
  11. 6 mussels, in the shell
  12. 1 cup peas
  13. ½ cup stuffed olives, sliced

Recipe

  1. Heat oil in a 2 litre casserole for 3 minutes.
  2. Add onion, garlic and heat a further 2 minutes.
  3. Add rice, chicken stock, salt, saffron, pepper and cook for 3 minutes. Stir.
  4. Fold in prawns, chicken, mussels and peas and cook a further 5 minutes, stirring after 2½ minutes.
  5. Add olives.
  6. Remove from oven and allow to stand for 10 minutes before serving.

Note: Keep casserole covered while cooking.
