Spanish Tuna Paella

Ingredients

  • 1 tablespoon oil
  • 1 chorizo sausage, sliced
  • 1 teaspoon John West Garlic
  • 1 red pepper (capsicum), chopped
  • 1 teaspoon paprika
  • 1 cup short grain white rice (calrose)
  • 1½ cups water
  • pinch saffron threads, optional
  • 125g Tuna Slices, drained
  • 1 tomato, chopped
  • 1 cup sliced green beans
  • 1 cup drained canned butter beans
  • salt and pepper to taste

Recipe

  1. Heat oil in a frying pan over a low heat.
  2. Fry chorizo, garlic and red pepper for 3-4 minutes.
  3. Add paprika and rice and stir over a low heat for 2-3 minutes longer.
  4. Add water, saffron, tuna and tomato and mix well.
  5. Cover and cook on a low heat for 12 minutes or until rice is tender and most of the liquid is absorbed.
  6. Add green beans, butter beans and salt and pepper and mix well.
  7. Cover and cook for 5 minutes longer.
  8. Serve with crusty bread.

Hint: Chorizo is a garlic and paprika flavoured Spanish sausage available from delicatessens. If unavailable, use a strong flavoured Italian sausage.
